Chef Curtis is an energetic culinary professional seamlessly blending creativity, passion for food and strong cooking skills. Chef Curtis was trained under classic French chefs at the TriBeCa based French Culinary Institute, honing his skills in traditional French cooking. Chef Curtis is known for his great sense of creativity and plating skills, which consistently wow diner’s eyes and palates. With 10 years of experience cooking in high volume environments, Chef Curtis has a background as a prep cook, brunch, lunch and dinner service line cook, Sous Chef, Executive Sous Chef, Chef de Cuisine, and Executive Chef. Chef Curtis brings to this operation a wealth of knowledge, having trained in Michelin Star kitchens and worked for such world renowned Chefs as Paul Liebrandt, Ben Pollinger, and Jesse Schenker. Each of these Chefs are recognized talents in the culinary world, where Chef Curtis worked side-by-side, learning the necessary skills to succeed in the New York City culinary world. Chef Curtis has worked not only in restaurants, but also in cooking private dining experiences, in client’s apartments, houses, and vacation homes. Though Chef Curtis is trained in French cuisine, this is not the limit to his food knowledge. Chef Curtis grew up with his Sicilian grandmother, who was one of his dominant inspirations in becoming a Chef. Chef Curtis has traveled to Italy twice and learned much about this culture and cuisine. Chef Curtis’ favorite food to eat is Southeast Asian, such as Vietnamese, Thai, Cambodian, Laotian, where he is routinely amazed by the ingredients and creative flavor combinations. Chef Curtis has a unique managerial style, having begun managing staff in the West Village at the French American restaurant Recette, where he met his wife, Australian Katie Blakey-Beisser. Chef Curtis has traveled extensively through the United States and Australia, as well as Italy, Sicily, Costa Rica, Colombia, Vietnam, Thailand and Taiwan. These experiences have cultivated unique tastes, cooking and techniques, which Chef Curtis brings to every creation.
